2024 'Fan Fiction'

Origin: Deol Vineyard, Cowichan Valley, BC
Grown in the Cowichan Valley on Vancouver Island. Once the grapes were harvested, the fruit was placed whole cluster into a stainless steel tank, sealed off from oxygen and pumped with co2 that was emanating from a neighbouring fermentation. The grapes went through a full 18 day carbonic maceration, pressed and aged in neutral oak barrels.

Palate - Blueberry concentrate, Gushers, Sea Salt
