Origin: Kaleden, BC
Organically farmed at Windy Ridge Vineyard in Kaleden, BC. 35 year old vines. On the slopes overlooking Skaha Lake. The soil is a mix of sandy loam and alluvial gravel from an ancient glacier and lake bed.
The entire lot was naturally fermented 100% whole cluster in open top bins. During maceration, we used our hands and feet to gently punch down the fruit once a day, for 14 to 21 days. We drained the free run juice from the ferments every 7 days. The wine was then gravity racked to neutral barrels where it finished fermentation and aged on lees undisturbed for 10 months. We bottled by hand, with 30ppm of added sulphur, unfined and unfiltered. We do not have any power or electricity in the winery so everything was done analog, using gravity, and our hands.
Nose - dried chrysanthemums, forest undergrowth, black sage
Palate - peppercorn, burgundy plums, salted espresso, chanterelle mushrooms, black cherry
