Organically farmed in Kaleden at Rossion Vineyards.
50% of the fruit was left whole cluster, 50% was destemmed by hand. Both portions were layered in fermenting totes. The fruit was macerated for 14 days, where it was foot treaded once a day and fermented naturally. It was then pressed into neutral barrels to continue fermenting through the winter/spring and rest for 9 months. At the end of fermentation, we added 25ppm of so2, We do not have any electricity or power on the farm or in the winery, so everything is done by hand including bottling.
Nose - fresh cut peonies, cloves, pomegranate, blackberries
Palate - japanese red plums, green peppercorns, damp forest top soil
