The southerly aspect at this site provides a warm climate, but being on the western slope of the valley, the lack of afternoon sun and abundance of morning sun make for a slightly cooler growing area. Combined with well-drained fluvial fans of stony gravel and sandy loam, the grapes are able to slowly ripen, and better retain acidity.
Fermented on skins for 7 days in concrete, basket pressed, aged for 3 months in stainless steel.
