Origin: Sagebrush Vineyard, Oliver, Okanagan Valley

The entire lot was direct pressed and fermented naturally in a mixture of neutral oak and stainless steel barrels. The barrels were stirred twice during fermentation. Once primary and secondary fermentation was complete we added 32 ppm of sulphur. The wine was left to rest on gross lees untopped for 21 months, it developed a healthy flor which it rested under for the entirety of elevage. It was then bottled unfined, unfiltered, by hand directly off of the gross lees from barrel.

Nose - wild strawberry, dried rosemary, raspberries & cream, hazelnut

Palate - salted marcona almond, white peach, pink grapefruit, fresh feta
