Origin: Three Boys Vineyard, Black Sage Bench, Okanagan Valley

A rose made in collaboration with and for one of our favourite restaurants, Pilgrimme on Galiano Island. Grown on deep sandy soils on the Black Sage Bench. Planted in 1994. In their 4th year of organic transition, with a focus on soil regeneration and building organic matter. Hand harvested on October 3rd with the help of Jesse and Mel from Pilgrimme. The fruit was whole bunch direct pressed in an open system press. The juice was drained into an open top vessel to settle overnight. The next day the juice was racked with full solids into neutral barrels where it underwent ambient fermentation. The wine remained in barrel for secondary fermentation and sat on lees for 6 months before being bottled unfined and unfiltered.
