Using the leftover pomace after pressing, we rehydrated it with water, leaving it for five days on skins while gently punching down. Basket pressed to stainless steel barrel. Spontaneous fermentation in stainless steel barrel. Hand bottled at 1.5 brix. The primary fermentation finished in the bottle. Disgorged January 2021.
